Farmers Market: Sorghum

Sorghum is a type of grass containing a cereal grain, much like wheat, oats, or barley. It was originally grown in Africa, but is now cultivated in many other parts of the world, including the United States. As a grass which is drought tolerant, it is an excellent choice for arid and dry areas. It is commonly known as an ingredient in sorghum molasses. But it is also important in making fodder, alcoholic beverages and biofuels. And there is even a sorghum flour. 

The sweet variety of sorghum is a popular version. Traditionally brown and sticky, is often called "molasses," though true molasses is made from sugar cane or sugar beets. For this, the stalks of the plant are harvested, rather than the seeds, and crushed like sugar cane or beets to produce  syrup. The syrup is then cooked down to concentrate the natural sugars and packaged for sale. Many people use sorghum like maple syrup. It is a popular ingredient but is also enjoyed over pancakes, grits or biscuits.
